 When it comes to farm animals, ducks might not be the first species that come to mind. However, at our farm, we have found that including ducks in our livestock repertoire has been a rewarding and beneficial decision. In this blog post, we would like to share why we chose to incorporate ducks into our farm and the valuable roles they play in enhancing our agricultural practices and ecosystem.



Natural Pest Control:

One of the primary reasons we welcomed ducks to our farm is their exceptional talent for natural pest control. To celebrate the launch of our blog, we're sharing a special recipe featuring our farm-fresh eggs - the Schreifels Family Farm Veggie & Herb Frittata! It's a simple, delicious dish that highlights the natural flavors of our homegrown produce and the incredible quality of our eggs. Give it a try and let us know what you think!


Veggie & Herb Frittata:

Ingredients:

  • 8 farm-fresh eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 bell pepper, diced
  • 1 cup homegrown cherry tomatoes, halved
  • 1 cup homegrown baby spinach
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh herbs (such as parsley, basil, and chives)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together eggs, milk, salt, and pepper. Set aside.
  3. In a large, oven-safe skillet, heat olive oil over medium heat. Add onion and bell pepper, and cook until softened, about 5 minutes.
  4. Add cherry tomatoes and spinach to the skillet, and cook for an additional 2 minutes.
  5. Pour egg mixture into the skillet, and sprinkle feta cheese and fresh herbs evenly on top.
  6. Cook on the stovetop for 3-4 minutes, until the edges begin to set.
  7. Transfer the skillet to the preheated oven, and bake for 15-18 minutes, or until the frittata is set and golden brown.
  8. Let cool for a few minutes before slicing and serving.
